USA Black Caviar is a small, family-run producer based in Bellevue, Washington, curing and packing its own caviar since 1995 — not a reseller working from a catalog, but the people who actually handle the fish, the cure, and the tins. That is why every order ships knowing exactly what is inside it: pearl size, cure, and handling straight from the packing room.

USA Black Caviar carries four caviars, each with its own character.
the roe of the Russian sturgeon (Acipenser gueldenstaedtii), cured malossol. Nutty and briskly saline with a faint sweetness and a clean, non-oily finish. Pearls run 2.8–3.2 mm in colors from deep amber to charcoal grey. Our classic connoisseur's caviar, and a solid first choice for new buyers.
from a cross of Kaluga and Amur sturgeon, and the closest legally available relative to Beluga (wild Beluga caviar has been banned from U.S. import since 2005, and we don't sell it in any form). Buttery and mild with a rounder profile than Ossetra, large glossy pearls (3.2–3.5 mm) in gold to dark brown. Approachable rather than briny — another good starting point.
wild-harvested from the Mississippi River basin. Nutty and earthy, softer and less briny than sturgeon roe, with a gentle pop. The most affordable entry point into fine caviar, at about a third of the cost of our sturgeon varieties.
the roe of Amia calva, a freshwater fish native to the U.S. and known in Louisiana as choupique. Naturally true black with no added dye, firm small pearls (about 2 mm), and a clean, mild flavor. A genuinely American caviar, and the lowest price per ounce in our catalogue.

How to serve
Serve it simply.
Chill, never freeze
Store caviar in the coldest part of the refrigerator at 28–32 °F. Freezing ruptures the pearls.
Use a nacre spoon
Serve with a mother-of-pearl, bone or horn spoon. Metal reacts and taints the flavour.
Finish within 48 hours
Once opened, eat caviar within 48 hours to keep its texture and clean finish.
Looking for Beluga caviar?
USA Black Caviar sells no Beluga caviar, in any form. Wild Beluga sturgeon has been banned from US import since 2005. Kaluga Hybrid is the closest legally available relative — larger pearls and a buttery profile.
