Why does caviar price vary so much?
Caviar price varies with species, sourcing and maturity. Sturgeon caviar costs the most because sturgeon are farm-raised for years before they produce roe, and that time is expensive. Paddlefish and bowfin roe cost far less because both are wild-harvested from US waters rather than raised to maturity on a farm.
Pearl size and fish maturity also move the price within a species. Older sturgeon give larger, darker pearls, which command a premium. Golden Ossetra, the rare amber roe of mature fish, sells for several times standard Ossetra where it is available.
What is the cheapest caviar, and is it any good?
Bowfin caviar is the cheapest caviar in the catalogue, at about $12 per ounce as of August 2026. Bowfin caviar is genuine cured roe with naturally true-black pearls, wild-harvested in the United States — not a dyed lumpfish substitute. It is milder and less complex than sturgeon caviar, which is why it costs a fraction of the price.
Paddlefish caviar is the next step up, at about $19 per ounce. Paddlefish caviar is a sturgeon relative with a nutty, earthy flavour, and it is the affordable bridge between bowfin and true sturgeon caviar.
What is the most expensive caviar we sell?
The Ossetra La Mer Noire gift box is the most expensive caviar we sell per ounce, at about $38 as of August 2026. That figure carries the presentation box and mother-of-pearl spoon, not just the roe. The most expensive by total price is the 454 g La Mer Noire tin, which is also the best value per ounce in the Ossetra line.
Does tin size change the price per ounce?
Yes. Larger tins cost less per ounce, because the fixed costs of packing and cold-chain shipping spread across more roe. In both sturgeon lines the 250 g tin costs about 9% less per ounce than the 100 g, and the 454 g Ossetra tin about 12% less. Stepping up a size is the easiest way to lower the price per ounce.
How much caviar do I need, and what will it cost?
Allow 12–15 g of caviar per person as an appetiser, or 30 g per person when caviar is the centre of the course. A 100 g tin serves six to eight as an appetiser. Multiply the per-ounce figure in the table by the tin weight in ounces to estimate the cost for your table.
