Specification
What does it taste like?
Bowfin caviar has firm, small pearls around 2 mm and a clean, mild flavour. The pearls hold their shape and give a distinct pop. Bowfin caviar is milder and less complex than sturgeon caviar, and its pearls are naturally true-black without any dye.
Is the 100 g jar the right size?
The 100 g jar serves six to eight people as an appetiser at 12–15 g each, or three to four when caviar is the centre of the course. Bowfin caviar carries the lowest price per ounce in the catalogue, so it suits a first taste or a casual gathering.
How to serve it
Chill the jar, then open at the table and serve straight from the jar.
- Spoon: Mother-of-pearl, bone or horn — never metal, which taints the flavour.
- With: Plain, or on blini with crème fraîche, or on egg and potato.
- Drink: Brut Champagne or chilled vodka.
Delivery and storage
USA Black Caviar ships this bowfin jar in an insulated cooler with gel ice, to all fifty states. It ships within three business days, then overnight via UPS, from $21 per order. Keep it refrigerated at 28–32 °F, and eat within 48 hours of opening. Never freeze caviar — freezing ruptures the pearls.
