What is sturgeon caviar?
Sturgeon caviar is the salted roe of fish in the order Acipenseriformes, cured malossol. USA Black Caviar stocks two true sturgeon caviars, Ossetra and Kaluga Hybrid, plus American paddlefish — a sturgeon relative, not a sturgeon. Bowfin caviar completes the range, a naturally true-black roe from Amia calva, which is not a sturgeon at all.
How the four caviars compare
Ossetra is nutty and firm; Kaluga is buttery with larger pearls; paddlefish is earthy and affordable; bowfin is the true-black, lowest-priced option. Start with Kaluga or Ossetra for a sturgeon tin, or bowfin for a first taste at a lower price.
