Specification
What does it taste like?
Paddlefish caviar tastes nutty and earthy, softer and less briny than sturgeon caviar. The pearls are small and steel-gray to charcoal, with a gentle pop. Paddlefish caviar is forgiving on blini, egg or a potato, which makes the small jar an easy first taste.
Is the 50 g jar the right size?
The 50 g jar serves three to four people as an appetizer at 12–15 g each, or one to two when caviar is the center of the course. The jar suits a dinner for two or a tasting before a larger order. For more guests, the 100 g jar costs less per ounce.
How to serve it
Chill the jar, then open at the table and serve straight from the jar.
- Spoon: Mother-of-pearl, bone or horn — never metal, which taints the flavor.
- With: Plain, or with blini and crème fraîche.
- Drink: Brut Champagne or chilled vodka.
