Beluga caviar, and why it is not sold in the US
Beluga caviar is the roe of the beluga sturgeon, Huso huso, the largest sturgeon in the world. Beluga caviar is prized for its large pearls and mild, creamy flavour. Wild beluga caviar has been banned from US import since 2005, so no legal wild Beluga is sold in the United States. USA Black Caviar sells no Beluga caviar, in any form, and recommends Kaluga Hybrid caviar as the closest legal relative.
What is Beluga caviar?
Beluga caviar is the salted roe of the beluga sturgeon, Huso huso, a Caspian and Black Sea species that can live for decades and grow beyond a thousand pounds. Beluga produces the largest pearls of any sturgeon, often 3.5 mm and up, in shades of pale to dark grey. Its flavour is mild, creamy and buttery rather than briny.
Beluga sat at the top of the traditional Caspian grading, above Ossetra and Sevruga. That reputation is why “Beluga” remains the most searched caviar term, even in markets where it cannot legally be sold.
Is Beluga caviar legal in the United States?
No legal wild Beluga caviar is sold in the United States. The US Fish and Wildlife Service banned imports of wild beluga sturgeon caviar in 2005 after listing the species as threatened under the Endangered Species Act. That ban still stands, so any wild Beluga offered for sale in the US is operating outside the law.
US import prohibitions on Russian-origin seafood add a second legal barrier, because much historic Beluga supply came from the Caspian basin. USA Black Caviar does not sell Beluga caviar and does not import it.
Why was Beluga caviar banned?
Beluga caviar was banned because the beluga sturgeon was fished close to extinction. Decades of overfishing and poaching in the Caspian and Black Sea basins collapsed the wild population. All sturgeon are listed under CITES Appendix II, and in 2005 the US went further and closed the border to wild beluga caviar.
The beluga sturgeon matures slowly, taking many years before it produces roe, which makes the species very slow to recover once depleted. Protecting it means keeping wild harvest off the market.
How much does Beluga caviar cost where it is legal?
Beluga caviar is among the most expensive caviar in the world where it is legally sold, well above Ossetra and Kaluga. Its price reflects the size of the fish, the years it takes to mature and the tight controls on supply. Because it cannot be sold legally in the US, no US price applies.
Buyers looking for a large-pearled, buttery caviar within US law will find Kaluga Hybrid at a fraction of the historic Beluga price. For a firmer, nuttier profile, Ossetra caviar is the classic choice.
What can I buy instead of Beluga caviar?
Kaluga Hybrid caviar is the closest legal alternative to Beluga caviar. The Kaluga sturgeon shares the genus Huso with beluga, so Kaluga Hybrid carries the large pearls and rounded, buttery flavour that Beluga is known for — without the import ban. It is genuinely a sister species, not a marketing substitute.
Ossetra caviar is the other strong choice. Ossetra has smaller, firmer pearls and a nuttier, brisker flavour, and it is the classic reference caviar for a first-time buyer. Is farmed Beluga caviar available?
Farmed beluga sturgeon exists in limited quantities outside the United States, raised under aquaculture rather than caught in the wild. US import of beluga caviar remains tightly restricted and permit-controlled even for farmed stock, and the market inside the US is effectively closed.
