Kaluga and Beluga

Kaluga is the closest legal relative to Beluga sold in the United States. Both belong to the genus Huso, and Kaluga is often called river Beluga for that reason. Wild Beluga has been banned from US import since 2005, and Kaluga filled the gap it left.

The resemblance is real but partial. Kaluga matches Beluga on pearl size and comes close on the buttery weight of the flavour. Beluga was milder and creamier, with a longer finish.
